A singular expression of Italy’s rich tradition of filled pasta, raviolo is distinguished by its generous size and carefully composed center. Unlike its smaller counterpart, ravioli, each individual raviolo is made to stand alone, with delicate sheets of fresh pasta enclosing a filling of whipped ricotta and a whole egg yolk.
Inside Yolan’s kitchen, guests will craft fresh pasta by hand while learning the techniques behind rolling, filling, and sealing raviolo. Particular attention is given to the precision required to preserve the egg yolk within the pasta, creating a dish that celebrates both craftsmanship and simplicity.
Each guest will prepare fresh raviolo to take home, along with techniques and recipes for recreating the pasta in their own kitchen.
Following the lesson, enjoy a leisurely three-course lunch featuring seasonal salad, raviolo with Parmesan brodo and fried eggplant prepared by Yolan’s culinary team, dessert, and curated wine pairings.
